hendrix



found this radio set on the worlds biggest hendrix blog. there was seriously everything you could ever want to look for there. anyways, found this there, it's great. the narration is kinda hokey, but the stories are great. good road trip listening.

steak and potatoes

steak with onions and mushrooms
potatoes topped with green onion sour cream
and then followed up with a rootbeer float
a&w with breyers

potato, black bean and corn enchiladas

2 smaller potatoes
1 can of sweet corn (drained)
1 can of black beans (drained)
10 corn tortillas
onion
2 cloves garlic
vegetable oil
1 can of green enchilada
8oz mexican cheese
cumin
salt
8x12 pyrex dish

preheat the oven to 350 degrees

cut the potatoes up into pretty small pieces and cook them up in a pan with some vegetable oil. mash and chop up the garlic, and toss that in with the potatoes. finely chop some onion (your preference on how much) and toss that in with the potatoes and garlic. sprinkle on some salt and some cumin. in the meantime, in a mixing bowl add the corn, black beans, a small amount of the green enchilada sauce and some more salt and cumin. once your potatoes are soft, remove from the stove and add to the contents of the mixing bowl.
in another pan add about 1/16 to 1/8 inch oil and heat up. using tongs, place a tortilla into the oil. let it simmer a bit, then flip it over. once it's bubbling remove from oil and place onto a plate to cool. repeat with all tortillas
now that you've cooked all the tortillas, and mixed the corn, beans, and potatoes, grease the pyrex dish. take a single tortilla, add roughly a spoonful of the mixture, add a pinch of cheese, roll up the tortilla and place into the dish. you can place the tortilla into the plate and add contents if the tortillas are still too hot to the touch. after doing this with all the tortillas add a liberal amount of cheese on top and the same with the green sauce.
put into preheated oven for roughly 20 minutes or until it starts to look bubbly. let it cool and enjoy

made ribs last weekend, and cut up some of the leftovers for nacho's today. i'll post about ribs when i remember to get good pictures

jalapeno rings

found a recipe for this online. so good.



1 cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon chili powder
1 teaspoon garlic powder
2 eggs
1 cup beer
1/2 quart vegetable oil
2 cups sliced jalapeno peppers
Mix flour, salt, pepper, red chili powder, garlic powder, eggs, and beer together in a bowl.

In a deep fryer, or large pot heat oil to 365 degrees

Dip the sliced jalapenos in the batter. Place battered jalapenos in deep fryer. The jalapenos are fully cooked when they float to the surface of the oil. They should be golden brown and crispy

when i mixed this up, the batter was pretty thin so i added more flour til i had the consistency i liked. dipped em in ranch too.

BULLDOG

i've been had....kind of. i thought this was gonna be a bigger plate. like a small desert plate size thing. it's about the size of an ash tray instead. haha. whatevers. i loved orel hershiser. i tried to model my pitch delivery after him when i was in 4th grade. $15 well spent.

MAC N CHEESE

1 pack of elbow macaroni
1 large container of cottage cheese
1 small container of sour cream
1 beaten egg
3/4 teaspoon salt
dash of pepper
8oz of cheddar cheese or more
paprika

preheat the oven to 350

boil and drain the mac
combine cottage cheese, sour cream, salt and pepper, macaroni and most of the cheese in a big bowl. place in a greased 2quart oblong pan and top with the rest of the cheese and sprinkle on paprika. bake in the oven for about 45 minutes, or until cheese and noodles start to brown on top.

now you can also mix in a chopped up hot dog, some bacon, some garlic, or whatever you feel like. also, the cheese, paprika, salt and pepper don't need to be exact. more cheese is always good, and another egg should make it a little more fluffy.
